The map-fitting and model-building tools can be accessed by using Calculate -> Model/Fit/Refine.... Many functions have tooltips 1 describing the particular features and are documented in Chapter Modelling and Building.
[1] Put your mouse over a widget for a couple of seconds, if that widget has a tooltip, it will pop-up in a yellow box (or a grey box for some reason if you are using Macintosh).
